
Home Made Granola
- Enjoy homemade toasted granola made with olive oil. Naturally delicious with less sugar. Perfect for yourself or a thoughtful homemade gift.
Ingredients
Wet
- ½ cup extra virgin olive oil
- ½ cup maple syrup or honey (you could use less or none at all)
Dry
- 1 cup rolled oats
- 2 teaspoons ground ginger
- ½ teaspoon ground cinnamon
- 1 cup whole almonds
- 1 cup almond flakes
- ½ cup pepitas
- ½ cup sunflower kernels
- ½ cup linseeds
- 4 cups rice bubbles*
- 4 cup wheat flakes**
Method
Preheat the oven to 150°C.
Line an extra large baking tray or two smaller trays with baking paper.
In a large bowl, mix together all of the dry ingredients including the ginger and cinnamon.
Mix well with wooden spoon or hands.
Measure ½ cup Extra Virgin Olive Oil in to measuring jug and then fill with maple syrup or honey up to the ¾ cup line. Pour wet ingredients into dry and mix well with spoon or spatula. It should resemble course wet sand.
Pour mix onto tray and spread out evenly.
Bake for 30 minutes. Remove tray from oven and gently turn over with spatula. Return to oven for a further 30 minutes so that the mix is evenly toasted.
Stir gently so that it breaks apart and cool on tray. You will then need to mix in the Rice Bubbles and Wheat Flakes in two batches.
Put 2 cups of Rice Bubbles and 2 cups of Wheat Flakes into a large bowl. Add in half the toasted granola and mix gently. Transfer into large airtight container. Repeat.
This recipe will fill a 4.2L Sistema Cereal container.
Keeps for up to 4 weeks.
Enjoy with your favourite milk or sprinkled over yoghurt.
Also – if you want it to be more like granola, you can just have the mix without the Rice Bubbles and Wheat Flakes.
*I use Woolworths Rice Pops as they have less sugar than Rice Bubbles.
** Kelloggs brand but if you can find a flake style plain cereal that has less sugar, I would use that.
